I could be such a little smart ass when I was a kid. "ask me again and I'll tell you the same, neener neener."
I might not tell you my name but I would definitely tell you that I loved chocolate pudding if you'd asked. I doubt that I ever got my fill of chocolate pudding. I still LOVE chocolate pudding. Chocolate pudding. Does anything go down easier or make you feel so loved and cared for than chocolate pudding? Not too much.
So I'll give you a twofer today plus the raspberries. Two recipes that go hand and hand. Because of the eggs. You'll see. And the raspberries? I've given up my smart ass ways (sort of). These are the good raspberries.
Chocolate Pudding (from Nigella Express)
serves 4
1 cup whole milk
1/2 cup heavy cream
1/3 cup sugar
1 Tbsp. cornstarch
1/3 cup cocoa
2 Tbsp. boiling water
2 egg yolks
1 tsp. vanilla
2 oz. dark chocolate, finely chopped
Warm milk and cream together in a saucepan.
Put sugar and cornstarch in another pan and sift in cocoa. Add boiling water and whisk to a paste.
Whisk in eggs one at a time followed by the milk and cream, then vanilla.
Scrape down sides of pan and put on heat and cook whisking, 3-4 minutes until thickened.
Take off heat and whisk in finely chopped chocolate. Pour into bowl or separate dishes. Cover with plastic wrap. Cool, then chill.
Chocolate Macaroons (also from Nigella)
makes 2 dozen
2 egg whites
1 1/2 cups powdered sugar
1 cup ground almonds
3 Tbsp. cocoa
Heat oven to 400º. Line a baking sheet with parchment.
Mix egg whites with sugar, ground almonds and cocoa.
Drop my spoonful onto baking sheet.
Bake 11 minutes.
Let cool a minute before removing from pan.
Raspberries and Sugar (from my new idol Edna Lewis)
2 cups fresh raspberries
2 cups sugar
Mash together (do not blend) until sugar has dissolved. Pour into clean jar. Keeps in the fridge up to a year (it will never last that long in this house).

Neener, neener, neener! My hubby and I say that all the time to each other. He's quite a joker at times.
Yum....those recipes sound good. And how nice that one uses the yolks and the other used the whites so nothing goes to waste. Plus you get double the chocolate fix!
